Named as the Young Talent of 2016 by Gault et Millau, Adrian Klonowski ran Gdansk's Metamorfoza Restaurant before deciding on a change of direction last year. Currently you'll find him at Pädaste Manor in Estonia having become their Chef de Cuisine whilst investigating the terroir and customs of the Nordic islands.

 In Adrian's work you'll find many Japanese influences, an utmost respect for produce, and inspiration drawn from Nordic cuisine thanks to stages with Torsten Vildgaard at Studio and Nicolai Nørregaard at Kadeau in Bornholm.
