Dylan Watson-Brawn was born in Vancouver, Canada in 1993. He has spent the last 4 years living in Berlin and running a 6-seat restaurant in his apartment. His formative time as a chef were spent in Japan where he honed in on his sensibilities, his tastes, and embrace the Japanese philosophy. This spring he will be opening a 12-seat counter restaurant in Berlin with his partner Spencer Christenson and sommelier Christoph Geyler. The restaurant is based around relationships with farmers in the area as well as a handful of meticulously sourced products from abroad.
