Fabio Borgoni has been a butcher most of his life in the local town of Castel del Piano.  He specializes in pork butchery and charcuterie which he creates through secret techniques and recipes passed down through the generations which he never reveals.

Attention is given to the raising of the animals which must be local and have good diets - chestnut and grain based.  He and Charlotte Horton have collaborated on presenting the authenticity of products at fairs and events for many years.
