FLAVIA BORAWSKA

Chef, Opasly Tom

Flavia was born in Florence, Italy and comes from a family with Polish, Italian, English, Swiss and Greek roots. She was was brought up in Warsaw where the constant element of each family meal was this multicultural tradition, so from her childhood food meant fun and excitement of discovering something new. As she grew up, cooking became a passion, a source of happiness and a way of life. At the age of 20 Flavia began training with the famous Florentine chef Fabio Picchi, then continued her education at Le Cordon Bleu in London. After obtaining her diploma she trained as an intern at Noma in Copenhagen and later worked at The Clove Club and the Brunswick House in London.

After seven years she returned to Warsaw with a very successful pop-up at Opasly Tom restaurant. Flavia is fascinated by the culinary revival in Poland, and is firmly convinced that the concept of Polish cuisine is something far more wider and more complex that what at first meets the eye.
