Pawel together with Adam Pawlowski is helping the Terroir Warsaw Team develop the wine program and set ground for outstanding hospitality service during the event as an active member and Sommelier of the Polish Sommelier Association. Being the Head Sommelier at the Sheraton Hotel in Sopot gave him a good starting ground in the industry, but it was the Head Sommelier at Metamorfoza restaurant position that marked him as one of the most unique and talented sommeliers in the country. It was for his very individual approach focused primarily on natural, biodynamic wines with a very relatable connection to the producers that he has become much recognized and his very distinguishable pairings that he based on those difficult and complex wines.

Together with Adrian Klonowski and Matylda Grzelak almost since the beginning of their takeover in 2014 he worked on the restaurant's success which resulted in 3 toques of the Gault et Millau Guide and an unbeated title of best restaurant in North Poland that moved its position to one of best in Poland. In 2016 Pawel has been awarded a prestigious Prix au Sommelier award from the International Academy of Gastronomy as one of 7 in the world. He now runs his own Sommelier Services project in Poland and beyond its borders and is a national JRE Polska Sommelier.
