ROBERTO ROSSI

Chef at Silene

Born in Castel del Piano in 1972, Roberto Rossi started work as a waiter in the Inn Silene in Piscina at the age of fourteen. At that time the premises was run by Silene Ciacci, who was renowned for her dishes typical of the Amiata area. At the age of eighteen Roberto started working in the kitchen beside Silene and soon became her right hand.  At her death in 1993, Silene’s son, Maurizio Landi, invited Roberto to become his partner in the enterprise, and Roberto became the restaurant chef. Customers continued to respond positively to Roberto’s style, creativity with quality local products while remaining within the Tuscan tradition and soon the guide books began to mention the restaurant. 

Within a few years Silene had won an important place within the landscape of Tuscan catering, and Maurizio and Roberto decided to open a new restaurant in Pienza. Prato was opened in April, 1999, and there was an enthusiastic response to this initiative. 

Since 1992, Roberto has also been producing extra virgin olive oil. His olives are of the Seggiano Olivastra variety.
